Paraná, August 21, 2019 – School cooks at Ortigueira learned new recipes that use ingredients which are highly nutritional but are not always used in school meals due to lack of information, such as turmeric, Indian cress, green banana biomass, and others.  They recently participated in a workshop on innovating school meals using functional food and unconventional food plants, organized at the Prefeito Nilson Gorski Municipal School by the Municipal Education Department in partnership with the Social Forests – Planning Sustainable Properties program, a Klabin initiative that supports family farming.

 

 

During the workshop, held by consultant Fabíola Hommerding, the group of at least 30 school cooks prepared and tasted recipes such as brigadeiro made from green banana biomass, pumpkin cake with Barbados gooseberry, beans with caruru, potatoes au gratin with turmeric, and rice with turmeric, among others. “Some of the cooks know these ingredients but have no idea of their high nutritional value, which contributes to the growth and development of students,” explained Franciely Messias, nutritionist at the municipal government.

 

 

That was the case of cook Isabel Cristina da Silva dos Santos, who has been cooking meals for students of CMEI Cecília Meireles for 18 years. “I lived my whole life in the countryside and didn’t know that some plants were edible. I knew some of them, but didn’t even know their names. At the workshop, I could learn a lot and exchange ideas,” she said while revealing that she will make pumpkin brownies for kids who like chocolate.

 

 

Now, the initiative will move on to a new phase, which is planting these ingredients at the garden at the Rui Barbosa Municipal School in the community of Lageado Bonito, where the Social Forests program implements social and environmental education actions targeted at students. From this garden, seedlings will be shared with other schools. Another action was the launch of the “Recipe Challenge,” a contest that will reward recipes from municipal schools for their creativity, originality and contribution to a healthier school diet.
